Bean Enchiladas

enchiladasDelicious, filling, and almost entirely made from items you will have lying around your pantry and fridge anyway, this is the perfect weekday whip-up, or a great meal to make for friends. This will only set you back £2.60 and makes 6 enchiladas. Here’s how to make them:

Ingredients:

  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 2 carrots, grated
  • mexican seasoning to taste
  • 2 x 400g cans of chopped tomatoes
  • 2 x 400g cans of mixed Mexican beans (or just kidney beans)
  • 6 tortilla wraps
  • 200g natural yoghurt
  • 50g mature cheddar cheese

Instructions

  • Preheat oven to 220°c
  • Heat oil in large frying pan and cook the onions and carrots until soft
  • Drain and add beans to the frying pan, and cook for a minute
  • Sprinkle seasoning, and then pour in the chopped tomatoes
  • Bring to a boil and simmer until thickened. Season more if needed.
  • Fill tortillas with a large spoonful of bean mix each, and wrap up the edges to seal
  • Place filled tortillas into an ovenproof dish and spoon a mixture of the yoghurt, grated cheese and seasoning over the top
  • Bake for a few minutes until the top is golden and bubbling
