oven roasted pumpkin seeds

Happy Halloween!

In autumn I almost look forward to roasting pumpkin seeds more than any other pumpkin-related goodies. Fresh out of the oven, they are salty and crunchy and the best part is that they come free with any pumpkin purchase! If you’re carving pumpkins, you will have to scoop out the inside anyway, so why not roast the seeds to make a perfect and healthy snack? It only takes a couple minutes.

Cost: free if you’ve already bought a pumpkin or squash

  • pumpkin seeds
  • salt (coarse sea salt works best)
  • vegetable oil

  1. Preheat the oven to 200 C
  2. rinse the pumpkin seeds in a colander under running water to get rid of any orange bits
  3. spread on a baking sheet lined with greaseproof paper
  4. sprinkle a few tablespoons of oil and a tablespoon of salt on top (this really depends on how many seeds you have, so just go with your gut instinct)
  5. Roast in the oven for about 15 minutes or until some of the seeds are golden brown
